Currently working on the TRUE project "TRansition paths to sUstainable legume based systems in Europe" https://www.true-project.eu/. My research focuses on assessing the environmental footprint of legume-based feed and food across Europe, and optimising diets/food choices for improving health while decreasing the environmental footprint and monetary costs to the consumer. In short, I work with companies to produce the Life Cycle Assessments of their legumes-based products, considering nutrition, and I compare them with their conventional alternatives i.e. a plant-based burger with a beef burger. Eat beans, they are amazing!
